Tap into your creativity...even if you don't think what you are doing has room for creative thought, I bet it does. where do those creative sparks come from. Mine often come to me when I first awaken just before the chatter of my 'gotta go go go ' brain chatter begins.

#78 She-Knits unwinds.

Wow, TNNA was so intense. I felt like I had been hit by a truck for two days afterwords. Now life is in the summer groove which is a bizarre and initially difficult one for me when 5 of the kids go to summer camp...and then slowly turns in to the freest lightest feeling with a household of only 2 kids being here...then a feeling of excitement (upon the other kids return) and dread when getting closer to Fall...when the whole cycle of the year , beginning with the school year start-up happens all over again. I have got many more years of this ahead of me since my youngest is only 7. Must enjoy the ride!

#77 She-Knits Random mumblings

The end of the school year is insane- all seven kids were home- oldest was intensely studying for LSAT, 20 year old is home for the summer doing summer school and working...if she finds a job, 18 yr old graduated HS, 16 year old is in the midst of finals, 14 yr. old is graduating 6th grade tomorrow, 12 year old is finishing up 6th grade and 7 year old HAS SWINE FLU and I am leaving tomorrow night for TNNA..........I need to take some big deep breaths

#76 She-Knits Random thoughts and mac and cheese

Here is a nummy mac and cheese recipe:

Baked Macaroni and Cheese

6 to 8 servings

Ingredients

  • 1/2 pound elbow macaroni
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 tablespoon powdered mustard
  • 3 cups milk
  • 1/2 cup yellow onion, finely diced
  • 1 bay leaf
  • 1/2 teaspoon paprika
  • 1 large egg
  • 12 ounces sharp cheddar, shredded
  • 1 teaspoon kosher salt
  • Fresh black pepper

Topping:

  • 3 tablespoons butter
  • 1 cup panko bread crumbs

Directions

Preheat oven to 350 degrees F.
In a large pot of boiling, salted water cook the pasta to al dente.
While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.
Remember to save leftovers for fried Macaroni and Chees

How do you find community? Were/are you lonely when your kids were little. Do you use the internet to build community especially within your knitting world. I also give up more Mystery KAL information.
